物理化学性质：d:1.34;mp:270-273℃。DL-蛋氨酸从醇中结成白色薄片状结晶或结晶性粉末，微甜，有特殊气味。无旋光性。能溶于水、稀酸和稀碱类，微溶于95%的醇，不溶于醚。
